Dinner has a soundtrack. 12 songs paced to this 50-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Prepare the Fries: Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat completely dry.
  2. Make the Cajun Seasoning: In a small bowl, combine all Cajun Seasoning ingredients and mix well.
  3. Fry the Fries (First Fry): Heat the Vegetable Oil in a large, heavy-bottomed pot or deep fryer to 325°F (160°C). Fry the potatoes in batches for about 5-7 minutes, until slightly softened but not browned. Remove and drain on paper towels.
  4. Fry the Fries (Second Fry): Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes, until golden brown and crispy.
  5. Season the Fries: Immediately after removing from the oil, place the fries in a large bowl and sprinkle generously with the Cajun Seasoning. Toss to coat evenly.
  6. Serve immediately.
