Instructions
- Heat Olive Oil in a large skillet over medium heat.
- Add Yellow Onions to the skillet and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized and golden brown. Season with Salt, Black Pepper, and Thyme during the last 10 minutes of cooking.
- Spread Butter on one side of each slice of Sourdough Bread.
- Place one slice of bread, butter-side down, in a clean skillet over medium-low heat.
- Layer Cheddar Cheese and Gruyere Cheese on top of the bread.
- Top with the caramelized Onions.
- Place the second slice of bread on top, butter-side up.
- Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
- Serve immediately.
