Dinner has a soundtrack. 10 songs paced to this 50-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Bring the Water and Salt to a boil in a medium saucepan.
  2. Slowly whisk in the Cornmeal, reducing heat to low.
  3. Cook, stirring constantly, for 20-25 minutes, or until the mush is thick and pulls away from the sides of the pan.
  4. Pour the mush into a lightly greased 8x8 inch baking dish and let cool completely. Refrigerate for at least 2 hours, or preferably overnight.
  5. Cut the chilled mush into 1-inch squares or desired shapes.
  6. Heat the Vegetable Oil in a large skillet over medium-high heat.
  7. Fry the mush in batches for 2-3 minutes per side, or until golden brown and crispy.
  8. Drain on paper towels and serve immediately.
