Instructions

  1. Soak Dried Lima Beans in water overnight, or for at least 8 hours. Drain and rinse.
  2. In a large pot or Dutch oven, combine Ham Hocks, drained Lima Beans, Chicken Broth, chopped Onion, minced Garlic, Salt, Pepper, and Red Pepper Flakes.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours, or until the ham hocks are very tender and the lima beans are creamy.
  4. Remove the ham hocks from the pot. Shred the meat from the bones and return the meat to the pot. Discard the bones.
  5. Taste and adjust seasoning as needed. Serve hot.
