  1. Prepare the Crust: In a bowl, whisk together the Flour and Salt. Cut in the Shortening until the mixture resembles coarse crumbs. Gradually add Ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven to 350°F (175°C).
  3. Roll out the chilled dough and fit into a 9-inch pie plate. Crimp the edges.
  4. Prepare the Filling: In a saucepan, combine the Granulated sugar, Flour, and Salt. Gradually whisk in the Milk until smooth.
  5. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil. Boil for 1 minute, stirring continuously.
  6. Remove from heat and stir in the Melted butter and Vanilla extract.
  7. Pour the Filling into the prepared pie crust.
  8. Bake for 45-50 minutes, or until the filling is set and lightly golden brown. Let cool completely before serving.
