Instructions
- Heat Olive Oil in a large pot over medium heat.
- Add Onion, Carrots, and Celery from the Vegetables group and cook until softened, about 5-7 minutes.
- Add Garlic from the Vegetables group and cook for 1 minute more.
- Stir in Red Lentils, Vegetable Broth, Thyme, Smoked Paprika, and Black Pepper from the Lentils & Broth group.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
- Season with Salt from the Lentils & Broth group to taste.
- Stir in Lemon Juice from the Finishing group before serving.
