  1. Preheat oven to 375°F (190°C). Grease a loaf pan.
  2. Heat Olive Oil in a large skillet over medium heat. Add Onion, Carrots, Celery, and Mushrooms and cook until softened, about 8-10 minutes.
  3. In a large bowl, combine all Vegetables with Cooked Brown Rice, Black Beans, Kidney Beans, and Rolled Oats.
  4. Add Tomato Paste, Soy Sauce, Garlic Powder, Onion Powder, Smoked Paprika, Salt, and Pepper to the bowl and mix well.
  5. Transfer the mixture to the prepared loaf pan and spread evenly.
  6. In a small bowl, whisk together Ketchup and Brown Sugar to create the Glaze.
  7. Spread the Glaze evenly over the top of the loaf.
  8. Bake for 60-70 minutes, or until firm and the glaze is bubbly. Let cool for 10 minutes before slicing and serving.
