  1. Place Potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain Potatoes and let cool slightly.
  3. While Potatoes are cooling, prepare the Sauce by combining all Sauce ingredients in a medium bowl and mixing well.
  4. In a large bowl, combine cooled Potatoes, Celery, Red Onion, Hard Boiled Eggs, Cheddar Cheese, and Bacon.
  5. Pour Sauce over Potato mixture and gently stir to coat evenly.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
