  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine all Filling ingredients until well blended.
  3. Unfold the Puff Pastry sheet on a lightly floured surface. Cut into 6 equal squares.
  4. Place a spoonful of the Peanut Butter Banana Filling in the center of each square.
  5. Fold the pastry squares diagonally to form triangles, pressing the edges firmly to seal. Crimp edges with a fork.
  6. In a small bowl, whisk together the Egg Wash ingredients.
  7. Brush the top of each pastry with the Egg Wash.
  8. Bake for 15-20 minutes, or until golden brown and puffed up. Let cool slightly before serving.
