  1. Season chicken thighs with salt and pepper. Sear in a Dutch oven over medium-high heat until browned on all sides. Remove chicken and set aside.
  2. Melt butter in the same Dutch oven over medium heat. Continue cooking until butter turns brown and fragrant, about 5-7 minutes. Be careful not to burn.
  3. Add chopped fermented pickles, fermented pickle brine, sherry vinegar, brown sugar, and red pepper flakes to the browned butter. Simmer for 10 minutes, stirring occasionally.
  4. Return chicken thighs to the Dutch oven, ensuring they are submerged in the sauce. Cover and braise in a preheated oven at 325°F (160°C) for 60-75 minutes, or until chicken is fall-off-the-bone tender.
  5. Remove chicken from the sauce and shred with two forks. Return shredded chicken to the sauce and stir to coat.
  6. Spoon chicken mixture onto potato rolls, top with microgreens, and serve immediately.
