Instructions

  1. Preheat oven to 350°F (175°C).
  2. To make the Crust, combine flour and salt in a bowl. Cut in shortening until mixture resembles coarse crumbs. Gradually add cold water, mixing until dough comes together. Roll out dough and place in a 9-inch pie plate.
  3. To make the Filling, mash the pinto beans in a large bowl. Add brown sugar, molasses, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
  4. Pour the Filling into the prepared Crust.
  5. Bake for 50-60 minutes, or until filling is set. Let cool completely before serving.
