  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce several times with a fork. Bake for 45-60 minutes, or until tender.
  2. Let potatoes cool slightly, then cut in half lengthwise and scoop out the flesh, leaving about inch of potato attached to the skin. Reserve the potato flesh for another use.
  3. In a large skillet, cook Bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
  4. Add Onion and Bell Pepper to the skillet and cook until softened, about 5-7 minutes.
  5. Add Potato Skins to the skillet and cook for 5-7 minutes, flipping occasionally, until crispy.
  6. Sprinkle with Garlic Powder, Paprika, Black Pepper, and Salt. Stir to combine.
  7. Crumble the cooked Bacon over the Potato Skins. Serve immediately.
