2 tbsp Kosher Salt
1 tbsp Black Pepper-coarsely ground
1 tsp Garlic Powder
1 tsp Dried Thyme

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Combine all Rub ingredients in a small bowl.
  3. Pat the Prime Rib Roast dry with paper towels. Generously rub the entire roast with the Rub mixture.
  4. Place the roast, bone-side down, in a roasting pan. Roast for 15 minutes.
  5. Reduce oven temperature to 325°F (163°C). Continue roasting for approximately 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part registers 130°F (54°C) for medium-rare.
  6. Let the roast rest for 15-20 minutes before carving.
  7. While the roast rests, prepare the Au Jus. In a saucepan, combine all Au Jus ingredients and bring to a simmer. Cook for 5 minutes.
  8. Carve the roast against the grain and serve with Au Jus.
