Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Soak the Salt Cod in cold water for 24-48 hours, changing the water several times to remove excess salt.
  2. Drain the Salt Cod and poach in simmering water for 10-15 minutes. Flake the cod and set aside.
  3. In a large pot or Dutch oven, melt the Butter over medium heat. Add the Onion, Celery, and Carrot from the Vegetables group and cook until softened, about 5-7 minutes.
  4. Add the Potatoes from the Vegetables group and the Chicken Broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  5. Stir in the Milk, Heavy Cream, and Bay Leaf from the Dairy & Liquid group. Heat through, but do not boil.
  6. Add the flaked Salt Cod and Thyme from the Seasoning group. Season with Salt and Black Pepper to taste.
  7. Simmer for another 5-10 minutes to allow the flavors to meld. Remove the Bay Leaf before serving.
