  1. Heat Vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add Chicken and cook until browned on all sides. Remove chicken and set aside.
  3. Add Sausage to the pot and cook until browned. Remove sausage and set aside.
  4. Add Vegetables to the pot and cook until softened, about 5-7 minutes.
  5. Stir in Cajun seasoning, Paprika, Cayenne pepper, Thyme, Black pepper, and Salt. Cook for 1 minute more.
  6. Add Rice and stir to coat with the spice mixture.
  7. Pour in Chicken broth and Diced tomatoes. Bring to a boil.
  8. Return Chicken and Sausage to the pot. Stir well.
  9. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  10. Fluff with a fork and serve hot.
