1 pound Dried Great Northern Beans
8 cups Water
1 Ham Hock
1 Tablespoon Vegetable Oil
1 Onion-chopped

A hearty and comforting Southern classic featuring slow-cooked beans with ham hock and a simple, fluffy cornbread.
Instructions
  1. Soak Beans overnight in Water.
  2. Drain Beans and place in a large pot with fresh Water and Ham Hock. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until beans are tender.
  3. While Beans are simmering, heat Vegetable Oil in a skillet over medium heat. Add Onion and cook until softened, about 5 minutes. Add Garlic and cook for 1 minute more.
  4. Add the Onion and Garlic mixture to the Beans. Season with Salt and Pepper.
  5. Preheat oven to 200°C (400°F).
  6. In a large bowl, whisk together Cornmeal, Flour, Sugar, Baking Powder, Baking Soda, and Salt.
  7. In a separate bowl, whisk together Buttermilk, Melted Butter, and Egg.
  8. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  9. Pour batter into a greased 20x20 cm (8x8 inch) baking dish and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Serve Soup Beans hot with Cornbread.
