  1. Preheat oven to 350°F (175°C).
  2. Cook Chicken: Season Chicken with chili powder, cumin, garlic powder, and salt. Cook until fully cooked (internal temperature of 165°F/74°C). Shred the chicken.
  3. Prepare Sauce: In a bowl, combine all Sauce ingredients and mix well.
  4. Prepare Filling: In a separate bowl, combine shredded chicken, diced onion, diced green chiles, and chopped cilantro.
  5. Assemble Enchiladas: Dip each tortilla in the Sauce to soften. Fill each tortilla with about cup of the Filling and roll up. Place seam-down in a greased 9x13 inch baking dish.
  6. Cover the enchiladas with the remaining Sauce and sprinkle with shredded cheddar cheese.
  7. Bake for 20-25 minutes, or until bubbly and golden brown.
