Prepare the Ribs: Remove the membrane from the back of the pork spare ribs. Combine all Ribs ingredients in a bowl and rub generously over the ribs.
Make the Mustard Sauce: In a separate bowl, whisk together all Mustard Sauce ingredients until well combined.
Cook the Ribs: Preheat oven to 300°F (150°C). Place ribs in a baking dish, cover tightly with foil, and bake for 3 hours.
Glaze and Finish: Remove foil, brush ribs generously with Mustard Sauce. Continue baking for another 30-60 minutes, basting with sauce every 15 minutes, until ribs are tender and sauce is caramelized.
Rest and Serve: Let ribs rest for 10 minutes before cutting and serving.
