  1. In a large bowl, whisk together the Pancake Batter ingredients until just combined. Do not overmix.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown.
  4. Sprinkle 1/4 cup of the Filling ingredients onto one half of each pancake.
  5. Fold the pancake in half to create a quesadilla.
  6. Cook for another 1-2 minutes per side, or until the cheese is melted and the quesadilla is heated through.
  7. Serve immediately with Sour Cream and Salsa.
