1 lb 450 g Potatoes-peeled and cubed
Broth & Seasoning
8 cups 1.9 L Beef broth
2 tbsp 30 mL Tomato paste
1 tsp 5 mL Dried thyme
tsp 2.5 mL Dried bay leaf

Instructions

In a large pot or Dutch oven, heat Olive oil over medium-high heat.
Add Turtle meat and brown on all sides. Remove Turtle from pot and set aside.
Add Onion, Carrots, and Celery to the pot and cook until softened, about 5-7 minutes.
Stir in Tomato paste and cook for 1 minute more.
Pour in Beef broth, add Dried thyme, and Bay leaf. Bring to a boil.
Return Turtle meat to the pot. Reduce heat to low, cover, and simmer for 2 hours, or until Turtle is tender.
Add Potatoes and continue to simmer for another 30 minutes, or until Potatoes are tender.
In a small bowl, whisk together All-purpose flour and Cold water to create a slurry.
Slowly pour the slurry into the stew, stirring constantly, until the stew thickens. Simmer for 5 minutes more.
Season with Salt and Black pepper to taste. Remove Bay leaf before serving.
