  1. In a large pot or Dutch oven, heat Olive oil over medium-high heat.
  2. Add Turtle meat and brown on all sides. Remove Turtle from pot and set aside.
  3. Add Onion, Carrots, and Celery to the pot and cook until softened, about 5-7 minutes.
  4. Stir in Tomato paste and cook for 1 minute more.
  5. Pour in Beef broth, add Dried thyme, and Bay leaf. Bring to a boil.
  6. Return Turtle meat to the pot. Reduce heat to low, cover, and simmer for 2 hours, or until Turtle is tender.
  7. Add Potatoes and continue to simmer for another 30 minutes, or until Potatoes are tender.
  8. In a small bowl, whisk together All-purpose flour and Cold water to create a slurry.
  9. Slowly pour the slurry into the stew, stirring constantly, until the stew thickens. Simmer for 5 minutes more.
  10. Season with Salt and Black pepper to taste. Remove Bay leaf before serving.
