  1. Heat Olive Oil in a large pot or Dutch oven over medium heat.
  2. Add Yellow Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more.
  4. Add Cremini Mushrooms and cook until browned and softened, about 8-10 minutes.
  5. Add Acorn Squash and cook for 5 minutes, stirring occasionally.
  6. Stir in all Sauce ingredients. Bring to a simmer, then reduce heat to low, cover, and cook for 30 minutes, or until the squash is tender.
  7. Season with Salt and Black Pepper to taste.
  8. Stir in Fresh Parsley before serving.
