  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Brussels Sprouts with 1 tablespoon Olive oil, Salt, and Pepper.
  3. Spread Brussels sprouts in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and browned, flipping halfway through.
  5. While Brussels sprouts are roasting, prepare the Glaze. In a small saucepan, combine Apple cider, Maple syrup, Dijon mustard, Salt, and Pepper.
  6. Bring to a simmer over medium heat and cook for 5-7 minutes, or until slightly thickened.
  7. Remove Brussels sprouts from oven and transfer to a bowl.
  8. Pour Glaze over Brussels sprouts and toss to coat evenly.
  9. Serve immediately.
