  1. Halve the Avocado and remove the pit. Scoop out a little of the avocado flesh to create a larger well for the egg.
  2. Lightly season the avocado wells with Salt and Pepper.
  3. Crack an Egg into each avocado half.
  4. In a shallow dish, combine all Breadcrumb Coating ingredients.
  5. Gently press each avocado half, egg-side up, into the breadcrumb mixture, ensuring a good coating.
  6. Heat the Vegetable Oil in a skillet over medium heat.
  7. Carefully place the avocado halves, breadcrumb-side down, into the hot oil.
  8. Fry for 3-4 minutes, or until the breadcrumbs are golden brown and crispy. Flip carefully and fry for another 1-2 minutes, or until the egg is cooked to your liking.
  9. Remove from skillet and serve immediately.
