
Barley And Salt Pork Porridge

Pearl Barley
4 ounces
Salt Pork-diced
6 cups
Water
1 tsp
Salt
1/2 tsp
Black Pepper-ground

A hearty and simple porridge made with barley and salt pork, a traditional comfort food.
Instructions
- Rinse the Barley under cold water until the water runs clear.
- In a large pot, combine the Barley, Salt Pork, Water, Salt, Pepper, and Bay Leaf (if using).
- Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until the barley is tender and the liquid is absorbed. Stir occasionally to prevent sticking.
- Remove the Bay Leaf before serving. Adjust seasoning to taste.
