Instructions
- Shred the jackfruit using two forks, removing any tough core pieces.
- In a large skillet, combine the shredded jackfruit, all BBQ Sauce ingredients, and Taco Seasoning.
- Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for 30-40 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the sauce.
- Warm the tortillas according to package directions.
- Assemble the tacos by filling each tortilla with the BBQ pulled jackfruit and your desired toppings.
