  1. In a large skillet, brown the Ground Beef over medium heat. Drain off any excess grease.
  2. Stir in the Taco Seasoning and Water. Simmer for 5-7 minutes, or until the liquid has evaporated.
  3. Warm the Corn Tortillas slightly to make them more pliable. This can be done in a dry skillet or microwave.
  4. Place about 2 tablespoons of the Beef Filling and 1 tablespoon of the Cheddar Cheese down the center of each tortilla.
  5. Tightly roll up each tortilla and secure with toothpicks if needed.
  6. Heat the Vegetable Oil in a deep fryer or large pot to 350°F (175°C).
  7. Fry the taquitos in batches for 2-3 minutes per side, or until golden brown and crispy.
  8. Remove the taquitos from the oil and place them on a paper towel-lined plate to drain.
  9. Serve immediately with Sour Cream and Salsa, if desired.
