  1. In a large skillet, brown the Ground beef over medium-high heat. Drain off any excess grease.
  2. Add the Small onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the Taco seasoning and Water. Bring to a simmer and cook for 5-7 minutes, or until the liquid has evaporated.
  4. Remove from heat and stir in the Shredded cheddar cheese until melted.
  5. Warm the Large flour tortillas slightly to make them more pliable.
  6. Spoon about cup of the Beef Filling onto each tortilla. Fold in the sides, then roll up tightly.
  7. Heat the Vegetable oil in a large skillet over medium heat.
  8. Fry the chimichangas, seam-side down first, for 2-3 minutes per side, or until golden brown and crispy.
  9. Drain on paper towels. Serve immediately with Sour cream, Salsa, and Guacamole.
