Filling
32 ounces 907 g Cream cheese-softened
1 cups 360 g Granulated sugar
1 cup 240 mL Sour cream

Instructions

Preheat oven to 325°F (160°C).
Combine all Crust ingredients and press into the bottom of a 9-inch springform pan.
Bake crust for 8-10 minutes. Let cool.
In a large bowl, beat all Filling ingredients until smooth and creamy.
Pour filling over cooled crust.
Bake for 55-70 minutes, or until set around the edges but still slightly jiggly in the center.
Let cool completely, then refrigerate for at least 4 hours.
Make the Chocolate Ganache: Heat Heavy cream in a saucepan until simmering. Pour over chopped Semi-sweet chocolate. Let sit for 1 minute, then stir until smooth.
Pour Chocolate Ganache over chilled cheesecake. Refrigerate for another 30 minutes to set.
Garnish with additional crushed Oreos before serving.
