  1. Preheat oven to 375°F (190°C).
  2. In a large skillet (cast iron preferred), cook the Chorizo Mixture chorizo over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the corn and cook for another 2 minutes.
  3. In a separate bowl, whisk together the Cornbread Batter cornmeal, flour, sugar, baking powder, baking soda, and salt.
  4. Add the buttermilk, melted butter, and egg to the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the cornbread batter over the chorizo mixture in the skillet.
  6. Sprinkle the Topping cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving.
