  1. Preheat oven to 400°F (200°C). Grease a muffin tin.
  2. Slice Potatoes into approximately inch thick rounds. A mandoline slicer is helpful for even slices.
  3. In a large bowl, toss Potato slices with Olive Oil, Garlic Powder, Salt, and Pepper.
  4. Place 4-5 Potato slices into each muffin tin cavity, overlapping slightly to form a stack. Repeat until all potatoes are used.
  5. Sprinkle each stack generously with Grated Parmesan Cheese.
  6. Bake for 30-35 minutes, or until potatoes are tender and cheese is golden brown and crispy.
  7. Let cool slightly before removing from the muffin tin.
