Instructions
  1. Preheat oven to 450°F (232°C).
  2. To make the Biscuits, whisk together the Flour, Baking Powder, Baking Soda, and Salt in a large bowl.
  3. Cut in the Cold Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add the Buttermilk, mixing until just combined. Do not overmix.
  5. Turn dough out onto a lightly floured surface and gently pat down to about 1 inch thickness. Cut out biscuits using a 2-3 inch cutter.
  6. Place biscuits on an ungreased baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While biscuits are baking, make the Sausage Gravy. Cook the Breakfast Sausage in a large skillet over medium heat, breaking it up with a spoon, until browned.
  8. Drain off any excess grease.
  9. Sprinkle the Flour over the cooked sausage and cook for 1 minute, stirring constantly.
  10. Gradually whisk in the Milk, stirring constantly to prevent lumps. Bring to a simmer and cook until thickened, about 5-7 minutes.
  11. Stir in the Black Pepper and Salt.
  12. Split the warm biscuits in half and spoon the Sausage Gravy generously over the bottom half of each biscuit. Top with the other half.
  13. Serve immediately.
