Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Season Beef with Creole seasoning. Heat Vegetable oil in a large Dutch oven over medium-high heat. Sear Beef on all sides until browned, then remove and set aside.
  2. Add Yellow onion, Garlic cloves, and Green bell pepper to the Dutch oven and cook until softened, about 5-7 minutes. Stir in Tomato paste and cook for 1 minute more.
  3. Add Diced tomatoes, Beef broth, Worcestershire sauce, Cayenne pepper, Salt, and Black pepper to the Dutch oven. Bring to a boil, then reduce heat and return Beef to the pot.
  4. Cover and simmer for 2.5-3 hours, or until Beef is very tender. Shred Beef with two forks.
  5. While Beef is simmering, prepare the Grits. Bring Water and Salt to a boil in a medium saucepan. Gradually whisk in Grits and reduce heat to low. Cook, stirring frequently, for 20-25 minutes, or until Grits are creamy and thickened.
  6. Stir Butter into Grits. Serve shredded Beef grillades over creamy Grits.
