Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. In a large pot or Dutch oven, heat Vegetable oil over medium-high heat.
  2. Add Chicken and cook until browned on all sides. Remove chicken and set aside.
  3. Add Sausage to the pot and cook until browned. Remove sausage and set aside.
  4. Add Onion, Bell pepper, and Celery (the 'holy trinity') to the pot and cook until softened, about 5-7 minutes.
  5. Add Garlic and cook for 1 minute more.
  6. Stir in Cajun seasoning, Paprika, Cayenne pepper, Thyme, Black pepper, and Salt.
  7. Add Rice and stir to coat with the spices.
  8. Pour in Chicken broth and Diced tomatoes. Bring to a boil.
  9. Return Chicken and Sausage to the pot. Stir well.
  10. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  11. Fluff with a fork and serve hot.
