Instructions
  1. Preheat oven to 400°F (200°C).
  2. Pat the Chicken dry with paper towels.
  3. Rub the Chicken with Olive Oil, Salt, and Black Pepper.
  4. Stuff the cavity of the Chicken with Lemon quarters, Thyme sprigs, and Garlic.
  5. Place the Chicken in a roasting pan.
  6. Roast for 75-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  7. Let rest for 10 minutes before carving.
