Lemon Thyme Roasted Chicken

A classic roasted chicken infused with the bright flavors of lemon and thyme, perfect for a comforting weeknight meal.
Instructions
- Preheat oven to 400°F (200°C).
- Pat the Chicken dry with paper towels.
- Rub the Chicken with Olive Oil, Salt, and Black Pepper.
- Stuff the cavity of the Chicken with Lemon quarters, Thyme sprigs, and Garlic.
- Place the Chicken in a roasting pan.
- Roast for 75-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Let rest for 10 minutes before carving.
