  1. In a bowl, combine all Shrimp ingredients and toss to coat evenly.
  2. Heat oil in a large skillet over medium-high heat. Fry shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
  3. In the same skillet, melt all Sauce ingredients over medium heat. Bring to a simmer and cook for 2-3 minutes, stirring occasionally.
  4. Add the Vegetables to the Sauce and cook until softened, about 5-7 minutes.
  5. Add the fried Shrimp to the skillet and toss to coat with the sauce. Cook for another 2-3 minutes.
  6. Garnish with Chopped Parsley and serve immediately.
