  1. Heat vegetable oil in a pan over medium heat. Add chopped onion and sauté until golden brown.
  2. Add minced garlic, grated ginger, and chopped green chili (if using). Sauté for another minute until fragrant.
  3. Add turmeric powder, red chili powder, and coriander powder. Sauté for 30 seconds, stirring constantly to prevent burning.
  4. Add diced tomatoes and salt. Cook until the tomatoes soften and the oil starts to separate from the mixture (about 5-7 minutes).
  5. Add water and bring to a simmer. Reduce heat and simmer for 5 minutes.
  6. Add frozen green peas and paneer cubes. Gently stir to combine.
  7. Cover and cook for another 5-7 minutes, or until the peas are tender and the paneer is heated through.
  8. Stir in garam masala and garnish with fresh cilantro before serving.
  9. Serve hot with rice, naan, or roti.
