  1. Preheat oven to 350°F (175°C).
  2. Season Chicken with salt and pepper. Cook chicken breasts until cooked through, then shred.
  3. In a large saucepan, melt Butter. Whisk in flour and cook for 1 minute to make a roux.
  4. Gradually whisk in Chicken broth until smooth. Bring to a simmer, stirring constantly.
  5. Stir in Heavy cream, Sherry, Garlic powder, and Onion powder. Simmer for 5 minutes, or until sauce has thickened.
  6. In a large bowl, combine shredded Chicken, cooked rice, Cream of mushroom soup, and half of the cheddar cheese.
  7. Pour the sauce over the chicken mixture and stir to combine.
  8. Pour the mixture into a greased 9x13 inch baking dish.
  9. In a small bowl, combine crushed Ritz crackers and melted butter. Sprinkle over the casserole.
  10. Sprinkle the remaining cheddar cheese over the cracker topping.
  11. Bake for 20-25 minutes, or until bubbly and golden brown.
