1/2 cup Butter

A classic comfort food casserole with chicken, creamy sauce, and a cheesy topping.
Instructions
  1. Preheat oven to 350°F (175°C).
  2. Season Chicken with salt and pepper. Cook chicken breasts until cooked through, then shred or dice.
  3. In a large saucepan, melt Butter. Whisk in Flour and cook for 1-2 minutes to create a roux.
  4. Gradually whisk in Chicken broth until smooth. Bring to a simmer, stirring constantly.
  5. Stir in Heavy cream, Dry sherry, Garlic powder, and Onion powder. Simmer for 5 minutes, or until sauce has thickened.
  6. In a large bowl, combine shredded Chicken, Sauce, Cream of mushroom soup, Cream of chicken soup, and Frozen mixed vegetables.
  7. Pour mixture into a greased 9x13 inch baking dish.
  8. In a small bowl, combine Shredded cheddar cheese, Crushed Ritz crackers, and Melted butter. Sprinkle over the casserole.
  9. Bake for 20-25 minutes, or until bubbly and golden brown.
