  1. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  2. Combine the Sweetener ingredients in a heavy-bottomed saucepan over medium heat. Stir constantly until the sugar dissolves.
  3. Continue cooking, without stirring, until the mixture reaches 300°F (149°C) on a candy thermometer – the ‘hard-crack’ stage.
  4. Remove from heat and quickly stir in the Butter, Salt, and Vanilla Extract.
  5. Immediately add the Nuts and stir to coat evenly.
  6. Pour the mixture onto the prepared baking sheet and spread it into a thin, even layer.
  7. Let cool completely before breaking into pieces.
