  1. In a large bowl, combine the Cabbage.
  2. In a small saucepan, combine all Pickling Brine ingredients. Bring to a simmer over medium heat, stirring until sugar and salt are dissolved. Remove from heat and let cool slightly.
  3. Pour the Pickling Brine over the cabbage. Toss to coat evenly.
  4. Add any Optional Add-ins, if desired.
  5. Cover and refrigerate for at least 30 minutes, or up to 24 hours, to allow the cabbage to pickle. The longer it sits, the more flavorful it will become.
  6. Before serving, drain any excess liquid.
