  1. Melt Butter and Olive Oil in a large pot or Dutch oven over medium heat.
  2. Add Leeks and Onion from the Vegetables group and cook until softened, about 8-10 minutes.
  3. Add Potatoes and Chicken Broth from the Vegetables group. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
  4. Stir in Thyme from the Vegetables group. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  5. Return the soup to the pot. Stir in Heavy Cream from the Dairy group and heat through. Do not boil.
  6. Season with Salt and Black Pepper from the Seasoning group to taste. Serve hot.
