  1. In a large bowl, combine all Clam Mixture ingredients and mix until just combined. Do not overmix.
  2. Heat about 2 inches of vegetable oil in a deep fryer or large pot to 350°F (175°C).
  3. Drop spoonfuls of the clam mixture into the hot oil, being careful not to overcrowd the pot.
  4. Fry for 3-4 minutes, turning occasionally, until golden brown and cooked through.
  5. Remove clam cakes with a slotted spoon and drain on paper towels.
  6. Serve immediately with tartar sauce or your favorite dipping sauce.
