Dinner has a soundtrack. 16 songs paced to this 75-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Place Salt Pork in a large skillet over medium heat. Cook, stirring occasionally, until browned and crispy, rendering out the fat (about 20-25 minutes). Remove salt pork with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  2. While the salt pork is cooking, prepare the Johnnycakes. In a large bowl, whisk together the Yellow Cornmeal, All-Purpose Flour, Baking Powder, and Salt.
  3. Gradually add the Water to the dry ingredients, stirring until just combined. Stir in the melted Butter.
  4. Heat a lightly oiled griddle or skillet over medium heat. Pour cup of batter onto the hot surface for each johnnycake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve the crispy Salt Pork with the warm Johnnycakes. Drizzle with some of the rendered salt pork fat.
