Cut the Shrimp into bite-sized pieces.
In a glass bowl, combine the Shrimp with all Citrus Marinade ingredients. Ensure the Shrimp is fully submerged in the juice.
Cover and refrigerate for 20-25 minutes, or until the Shrimp turns opaque and pink.
Drain the Shrimp, discarding the marinade.
In a separate bowl, combine the Shrimp with all Vegetables and Seasoning ingredients.
Mix well and serve immediately with tortilla chips or tostadas.
