Place the Beans in a large bowl, cover with water, and soak overnight. Drain and rinse the Beans.
Combine all Ham, Vegetables, and Beans in a slow cooker.
Pour the Chicken Broth over the ingredients in the slow cooker.
Add the Thyme, Black Pepper, and Salt to the slow cooker.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the Beans are tender.
Taste and adjust seasoning as needed before serving.
