Instructions
- Prepare the Waffle Batter: In a large bowl, whisk together the All-Purpose Flour, Sugar, Baking Powder, and Salt.
- In a separate bowl, whisk together the Large Eggs, Milk, and Melted Butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Prepare the Elote Topping: In a medium bowl, combine the Frozen Corn, Mayonnaise, Cotija Cheese, Chili Powder, Garlic Powder, Cayenne Pepper, and Lime Juice. Mix well.
- Heat your waffle iron according to the manufacturer's instructions.
- Pour the appropriate amount of waffle batter onto the hot waffle iron and cook until golden brown and crispy.
- Top each waffle with a generous amount of the Elote Topping and garnish with Chopped Cilantro.
- Serve immediately.
