  1. Cut Tortillas into thin strips.
  2. Heat Vegetable Oil in a large skillet over medium-high heat.
  3. Fry Tortilla strips until golden brown and crispy. Remove and drain on paper towels.
  4. In a bowl, whisk together Eggs, Milk, Salt, and Pepper.
  5. In the same skillet, sauté Onion and Jalapeno (if using) until softened, about 5 minutes.
  6. Pour Egg mixture into the skillet and cook, stirring occasionally, until almost set.
  7. Add fried Tortilla strips and Cheese to the skillet. Continue cooking until the cheese is melted and the eggs are fully cooked.
  8. Serve immediately with Pico de Gallo, Sour Cream, and Avocado.
