2 cloves Garlic-minced
28 oz Crushed Tomatoes
14.5 oz Diced Tomatoes-undrained

Instructions
  1. Heat Olive Oil in a large pot over medium heat.
  2. Add Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more, until fragrant.
  4. Stir in Tomato Paste and cook for 1 minute.
  5. Add Crushed Tomatoes, Diced Tomatoes, Vegetable Broth, Dried Basil, Dried Oregano, Black Pepper, Salt, and Sugar.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  7. Use an immersion blender to blend the soup until smooth (or carefully transfer to a blender and blend in batches).
  8. Serve hot, garnished with Fresh Basil and Croutons if desired.
