Tomato Soup
A simple, comforting tomato soup perfect for a quick lunch or dinner. This recipe uses canned tomatoes and basic pantry staples.

A simple, comforting tomato soup perfect for a quick lunch or dinner. This recipe uses canned tomatoes and basic pantry staples.
Instructions
- Heat Olive Oil in a large pot over medium heat.
- Add Onion and cook until softened, about 5 minutes.
- Add Garlic and cook for 1 minute more, until fragrant.
- Stir in Tomato Paste and cook for 1 minute.
- Add Crushed Tomatoes, Diced Tomatoes, Vegetable Broth, Dried Basil, Dried Oregano, Black Pepper, Salt, and Sugar.
- Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Use an immersion blender to blend the soup until smooth (or carefully transfer to a blender and blend in batches).
- Serve hot, garnished with Fresh Basil and Croutons if desired.
