  1. Season Chicken with chili powder, cumin, garlic powder, and salt.
  2. Heat a skillet over medium-high heat. Add Chicken and cook until browned and cooked through, about 6-8 minutes. Shred the Chicken.
  3. In a bowl, combine shredded Chicken, diced onion, diced bell pepper, and pickled jalapeños.
  4. Spread half of the Cheese evenly over the skillet. Place two tortillas on top of the cheese.
  5. Top each tortilla with half of the Chicken filling, then sprinkle with the remaining Cheese.
  6. Place the remaining two tortillas on top. Press down firmly on the tortillas to 'smash' them into the cheese.
  7. Cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted and crispy.
  8. Carefully flip the quesadillas and cook for another 2-3 minutes, or until golden brown and crispy.
  9. Remove from skillet and let cool slightly before cutting into wedges and serving.
