In a bowl, combine Chicken ingredients and marinate for 15 minutes.
In a separate bowl, whisk together all Sauce ingredients and set aside.
Cook wonton wrappers according to package directions. Drain and set aside.
Heat 1 tablespoon of Vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add remaining 1 tablespoon of Vegetable oil to the skillet. Add Vegetables and stir-fry for 3-5 minutes, until tender-crisp.
Pour Sauce over vegetables and bring to a simmer. Cook for 1-2 minutes, until sauce has thickened slightly.
Add cooked chicken and wonton wrappers to the skillet. Toss to coat everything in the sauce.
Garnish with Sesame seeds and Green onions before serving.
